Sea Salt Caramel Chocolate Chip Cookies

Ingredients:

*** Set out all ingredients ahead of time so they are at room temperature ***

2 cups of flour
1/2 of a teaspoon of baking soda
3/4 of a cup of salted butter
1 cup of light brown sugar
1/2 of a cup of sugar
 1 egg

 1 egg yolk
  2 teaspoons of vanilla extract
3/4 of a cup of semi-sweet chocolate chips
  Approximately 16 individually wrapped caramels
  Sea Salt

Preparation:

Cut each caramel into 4 of 5 pieces and set aside

Combine flour and baking soda in a bowl and set aside

cream butter, sugar, and brown sugar

Add egg, yolk, and vanilla and mix
Gradually add your dry ingredients and mix on low until dough forms

(I added about 3 tablespoons at a time - this is representative of my progress)

 Add chocolate chips

Fold the chocolate chips into the dough with as few steps as possible
It is important not to over mix the dough

Cover and chill for a minimum of 30 minutes.

Place 1.5-2" diameter drops of dough onto a cookie sheet and add 2-3 caramels on top

Bake at 325 degrees for 10-12 minutes or until the edges have begun to brown

After removing from the oven sprinkle with sea salt
